  • 4 pieces Cod or tilapia fillets High-quality, fresh fillets preferred.
  • 2 medium Juicy lemons For squeezing fresh lemon juice.
  • 2 cups Halved cherry tomatoes Adds sweetness when roasted.
  • 1/2 cup Black olives Briny punch; can substitute with green olives.
  • 3 cloves Garlic Minced; be careful not to burn.
  • 2 teaspoons Oregano Fresh preferred, but dried is okay.
  • 2 tablespoons Olive oil Extra virgin for the best flavor.
  • 2 tablespoons Fresh parsley Sprinkled on top for garnish.
  • 1 loaf Crusty bread Optional; ideal for soaking up juices.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Place the cod or tilapia fillets in a baking dish in a single layer.
  • Squeeze fresh lemon juice over the fish, ensuring it’s evenly coated.
  • Add halved cherry tomatoes and black olives around the fish.
  • Mince garlic and sprinkle it over the top, then add oregano.
  • Drizzle olive oil over the entire dish.
  • Bake for 20-25 minutes, or until the fish flakes easily with a fork.
  • Garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat in the oven at 350°F (175°C) for about 10 minutes.
