Ingredients
  

For the Chicken Gyros

  • 1.5 lbs boneless, skinless chicken breast Choose high-quality chicken for best flavor.
  • 3 tbsp olive oil Use a peppery olive oil for depth of flavor.
  • 3 cloves garlic, minced Use fresh garlic for optimal flavor.
  • 1 each lemon, juiced Freshly squeezed lemon juice recommended.
  • 2 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 4 each pita breads or flatbreads Can substitute with pita chips for a crunchy snack.

For the Creamy Feta Tzatziki

  • 1 cup Greek yogurt
  • 1/2 cup crumbled feta cheese
  • 1/2 each cucumber, grated and squeezed to remove excess moisture
  • 1 clove garlic, minced
  • 1 tbsp fresh dill, chopped
  • 1 tbsp fresh mint, chopped
  • 1 tbsp lemon juice
  • to taste Salt and pepper

For Serving

  • to taste Sliced red onion
  • to taste Sliced tomatoes
  • to taste Chopped cucumber
  • to taste Lettuce leaves

Instructions
 

Preparation

  • In a large bowl, combine olive oil, minced garlic, lemon juice, oregano, cumin, paprika, salt, and pepper to make the marinade.
  • Add chicken breasts to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour, preferably overnight.
  • In another bowl, mix Greek yogurt, crumbled feta cheese, grated cucumber, minced garlic, dill, mint, lemon juice, salt, and pepper until smooth to create the tzatziki. Cover and chill.

Cooking

  • Preheat grill or grill pan over medium-high heat.
  • Remove chicken from the marinade and grill for 6-7 minutes on each side until fully cooked. Let rest for 5 minutes, then slice thinly.
  • Warm pita or flatbreads on the grill for about a minute until soft.

Assembly

  • Place sliced chicken in a warm pita, add a generous dollop of creamy feta tzatziki, and top with sliced red onion, tomatoes, cucumbers, and lettuce. Roll up and serve.

Notes

Don’t rush the marinating process for better flavor. Use a meat thermometer to avoid overcooking the chicken.
