Ingredients
  

For the Crisps

  • 1 package Phyllo dough Thawed overnight in the fridge
  • 2 tablespoons Olive oil For sautéing and brushing
  • 1 cup Fresh spinach Use the freshest available
  • 1 cup Feta cheese, crumbled Use good quality for best results
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Dried oregano Add more to taste
  • to taste Salt
  • to taste Pepper

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C) and prepare all your ingredients.
  • In a skillet, heat 2 tablespoons of olive oil over medium heat. Sauté the chopped onion and minced garlic until golden, about 5-7 minutes.
  • Add the fresh spinach to the skillet and sauté until wilted, about 3-4 minutes. Stir vigorously.
  • Remove from heat and stir in crumbled feta, dried oregano, salt, and pepper. Adjust seasoning to taste.

Assembly and Baking

  • Layer phyllo sheets on a clean surface, brushing each sheet with olive oil.
  • Place a spoonful of the spinach-feta mixture at one end of the phyllo and roll tightly, tucking in edges.
  • Place the rolled crisps on a baking sheet lined with parchment paper and brush tops with olive oil.
  • Bake for 20-25 minutes or until golden brown and crispy.
  • Remove from the oven and let cool for a few minutes before serving.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat in the oven at 350°F (175°C) for 10 minutes. You can customize with other vegetables or cheeses as per your taste.
