  • 3 pieces ripe bananas, mashed The riper, the better!
  • 1/3 cup melted butter Can substitute with coconut oil.
  • 1 teaspoon baking soda This is the leavening agent.
  • a pinch salt Balances all the sweet flavors.
  • 3/4 cup sugar Reduce to 1/2 cup for less sweetness.
  • 1 large egg, beaten Can use a flax egg for vegan option.
  • 1 teaspoon vanilla extract Always go for pure vanilla if possible.
  • 1 cup all-purpose flour Can swap with a gluten-free blend.
  • 1/2 cup Nutella Feel free to use a store brand.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, mash the bananas well.
  • Add the melted butter to the mashed bananas and mix until well integrated.
  • Stir in the baking soda and salt until fully mixed.
  • Add sugar, beaten egg, and vanilla; mix until combined but do not overdo it.
  • Gradually add in the flour, mixing gently until just incorporated.
  • Gently fold in the Nutella to create swirls.
  • Scoop the batter evenly into a lined muffin tin.
  • Bake for 18-20 minutes or until golden.
  • Allow to cool slightly before enjoying.

Notes

Best enjoyed with a cup of coffee or alongside yogurt. Store in an airtight container at room temperature for up to 3 days or freeze for longer storage.
