  • 1/4 cup sliced green onions Reserve some for garnish.
  • 1/2 cup low-sodium chicken broth Keeps the dish balanced.
  • 3 tablespoons mirin Adds complexity; substitute if needed.
  • 2 tablespoons dark soy sauce Opt for low-sodium if desired.
  • 1 tablespoon minced garlic Enhances flavor.
  • 2 teaspoons grated ginger Fresh ginger elevates the dish.
  • 1 teaspoon sesame oil Adds nutty aroma.
  • 1/2 teaspoon sriracha Adjust to taste for heat.

Vegetables

  • 4 cups coleslaw mix Introduces crunch and freshness.

Instructions
 

Cooking the Noodles

  • Bring a pot of water to a rolling boil. Cook the Lo Mein noodles according to package instructions, usually about 5 minutes. Drain and rinse to stop the cooking process.

Cooking the Pork

  • In a large skillet or wok, heat the peanut oil over medium-high heat. Add the ground pork and sliced green onions. Cook until browned and cooked through, about 5-7 minutes.

Whisking the Sauce

  • In a bowl, whisk together the chicken broth, mirin, dark soy sauce, garlic, ginger, sesame oil, and sriracha.

Combining Everything

  • Add the cooked noodles and coleslaw mix to the skillet with the pork. Pour the sauce over and toss everything together. Sauté for 2-3 minutes until well coated and warmed through.

Garnishing

  • Garnish with the remaining sliced green onions and serve warm.

Notes

Rinse the noodles to prevent clumping. Fresh ingredients enhance flavor. Adjust sriracha and ginger according to taste. Add other veggies as desired for variety.
