Ingredients

  • 2 tbsp olive oil Helps vegetables caramelize and adds flavor.
  • 1 tbsp maple syrup Enhances sweetness; essential for glaze.
  • 1 tsp cumin Earthy warmth that elevates the dish.
  • ½ tsp smoked paprika Adds depth of flavor.
  • to taste salt & pepper Season to bring out flavors.

For the Whipped Ricotta

  • 1 cup ricotta Creamy and the star of the dish.
  • 2 tbsp heavy cream Makes the ricotta airy.
  • 1 tsp lemon zest Adds brightness.

For Serving

  • 2 tbsp hot honey Drizzle over for a spicy-sweet finish.
  • to taste fresh herbs (like mint or parsley) Optional garnish for color and flavor.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, toss the carrots with olive oil, maple syrup, cumin, smoked paprika, salt, and pepper.
  • Spread the carrots evenly on the lined baking sheet.

Roasting

  • Roast the carrots for 25-30 minutes, flipping halfway through, until tender and caramelized.

Whipping Ricotta

  • In a food processor, whip together the ricotta, heavy cream, and lemon zest until smooth and airy.

Serving

  • Spread the whipped ricotta on a serving platter.
  • Arrange the roasted carrots on top and drizzle with hot honey.
  • Garnish with fresh herbs if desired.

Notes
