  • 1 small onion, quartered Caramelizes beautifully.
  • 1 cup chicken broth Adds moisture.
  • 2 tablespoons butter (optional) For added heartiness.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Pat the chicken dry and rub olive oil all over it.
  • Season generously with garlic, thyme, rosemary, salt, and pepper.
  • In a bowl, mix together the orange zest and juice, honey, soy sauce, and Dijon mustard; pour over the chicken.
  • Add onion quarters around the chicken and pour chicken broth in the pan.

Cooking

  • Roast for 1.5 hours, basting halfway with remaining glaze.
  • Let the chicken rest for 10-15 minutes before carving and serving.

Notes

Use a meat thermometer to ensure the chicken is cooked to 165°F (75°C). Rest the chicken to keep it juicy. Feel free to adjust herbs and spices to suit your taste.
