Sweet Potato Rounds

  • 2 large sweet potatoes Packed with fiber, vitamins, and minerals.
  • 2 tablespoons olive oil For a crispy exterior.
  • 1/2 teaspoon salt Enhances flavors.
  • 1/4 teaspoon ground black pepper Adds heat and depth.
  • 1/4 teaspoon ground cinnamon Optional for warmth.

Toppings

  • 2 tablespoons honey Adds sweetness.
  • 1/3 cup crumbled feta cheese Creamy and tangy.
  • 1 tablespoon chopped fresh parsley Brightens up the dish.

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Peel the sweet potatoes and slice them into 1/2-inch thick rounds.
  • Arrange the sweet potato rounds on a baking sheet lined with parchment paper.

Cooking

  • Drizzle the rounds with olive oil, and sprinkle with salt, pepper, and cinnamon if using.
  • Pop them in the oven for about 20-25 minutes, flipping halfway through.
  • Once roasted to perfection, transfer to a serving platter and drizzle with honey.
  • Top with crumbled feta cheese and sprinkle with chopped parsley.
  • Serve immediately.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. Reheat in the oven for best results.
