Preparation

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Peel the sweet potatoes and slice them into 1/2-inch thick rounds ensuring even sizes.
  • Arrange the sweet potato rounds in a single layer on the prepared baking sheet.
  • Drizzle olive oil over the sweet potatoes and sprinkle with salt, black pepper, and cinnamon (if using).

Cooking

  • Roast the sweet potato rounds in the preheated oven for about 20-25 minutes, flipping halfway through for even cooking.
  • When golden and tender, transfer to a serving platter, drizzle with honey, and sprinkle feta and parsley over the top.

Notes

To keep the rounds crispy, make sure they're not overcrowded on the baking sheet. You can also broil for a minute at the end for extra crispiness.
