  • 1 pound sausage Choose chicken, turkey, or beef sausage.
  • 6 pieces eggs
  • 1 cup milk Whole, skim, or dairy-free alternatives work.
  • 2 cups shredded cheese Sharp cheddar or your favorite types work well.
  • 1 cup bread cubes Optional for extra comfort.
  • 1 cup mixed vegetables Optional; add bell peppers, spinach, or broccoli.
  • to taste salt and pepper For seasoning.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large skillet over medium heat, cook the sausage until browned, breaking it up as it cooks. Drain excess fat.
  • In a large bowl, whisk together the eggs, milk, salt, and pepper until frothy.
  • Grease a baking dish with cooking spray or oil.

Assembly

  • Layer the cooked sausage in the greased baking dish. If using, add the bread cubes and mixed vegetables.
  • Pour the egg mixture over the layers.
  • Top with shredded cheese.

Cooking

  • Bake in the oven for 30-35 minutes, until eggs are set and cheese is bubbly and golden brown.
  • Let cool for a few minutes before slicing and serving.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat in microwave or oven. Can be made ahead and frozen before baking.
