  • 4 cups Romaine lettuce, chopped Provides crunch and freshness.
  • 1 piece Avocado, diced Riper for better creaminess.
  • 1 cup Cherry tomatoes, halved Adds color and burst of flavor.
  • 0.5 cup Chipotle-lime dressing Make extra for drizzling.

Instructions
 

Cooking Chicken

  • Preheat grill or grill pan to medium-high heat.
  • Season chicken with salt and pepper, and grill for about 6-8 minutes per side until cooked through.
  • Set aside to rest before slicing.

Preparing Salad

  • In a large bowl, combine black beans, sweet corn, chopped romaine lettuce, diced avocado, and halved cherry tomatoes.
  • Toss the ingredients together until mixed well.

Assembling Salad

  • Once chicken is rested, slice it into thin pieces and lay them on top of the vegetable mixture.
  • Drizzle with chipotle-lime dressing and gently toss to combine.

Serving

  • Serve immediately or chill for meal prep.

Notes

Let the salad sit for about 30 minutes after tossing for flavors to meld. Store leftovers without dressing in an airtight container for up to 3 days.
