Instructions
 

Marination

  • Cut the chicken thighs into manageable pieces.
  • Mix diced Hatch green chiles, minced garlic, cumin, paprika, salt, and pepper in a bowl.
  • Coat the chicken pieces with the marinade and let them marinate for at least 30 minutes.

Cooking

  • Heat a skillet over medium heat, adding a little oil if needed.
  • Place the marinated chicken in the skillet and cook for about 6-8 minutes per side until golden brown and cooked through.
  • Once cooked, remove chicken from heat and let it rest for a few minutes.

Assembly

  • Warm the mini tortillas in a dry skillet or microwave.
  • Slice the rested chicken into bite-sized pieces and lay them atop the warm tortillas.
  • Add your desired toppings and serve immediately.
