For the filling

  • 2 cups shredded chicken Can use leftover rotisserie chicken
  • 1 cup Hatch green chiles, diced Adds a nice spice
  • 1 cup cream cheese, softened For creaminess
  • 1 cup shredded cheese Cheddar or Mexican blend recommended
  • 1 teaspoon garlic powder For depth of flavor
  • 1 teaspoon onion powder Enhances the taste
  • 1 tablespoon lime juice Brightens the flavors
  • 8-10 pieces small tortillas Flour or corn, pliable enough to roll
  • Oil for frying Vegetable, canola, or avocado oil work
  • Salt and pepper to taste Essential flavor boosters

Instructions
 

Preparation

  • In a mixing bowl, combine the shredded chicken, Hatch green chiles, cream cheese, shredded cheese, garlic powder, onion powder, lime juice, salt, and pepper. Mix until well combined.
  • Take a tortilla and place a small amount of the filling in the center. Roll it tightly to form a taquito. Repeat with the remaining tortillas and filling.

Cooking

  • Heat oil in a frying pan over medium heat. Once hot, carefully place the taquitos seam side down. Fry until golden brown and crispy, about 3-4 minutes per side.
  • Remove the taquitos from the oil and drain on paper towels. Serve hot with your favorite dipping sauce.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. To reheat, pop them in the oven at 375°F (190°C) until crispy.
