  • 1 cup cream cheese, softened Let it soften at room temperature.
  • 1 cup jalapeños, diced Adjust based on spice tolerance.
  • 1 cup corn, canned or frozen Fresh corn can be grilled for added flavor.
  • 1 cup shredded cheese (cheddar or pepper jack) Pepper jack adds extra zest.
  • 1 medium onion, chopped Add for aromatic base.
  • 2 cloves garlic, minced Enhances flavor.
  • to taste salt and pepper Essential for rounding out flavors.
  • for garnish chopped cilantro Adds freshness.

Instructions
 

Preparation

  • Heat a splash of oil in a large pot and sauté the chopped onion until translucent, about 4-5 minutes.
  • Add minced garlic and stir until fragrant.
  • Add diced chicken and sear until browned.
  • Pour in the chicken broth and bring to a boil.
  • Lower the heat and add softened cream cheese, stirring until melted.
  • Stir in diced jalapeños, corn, and shredded cheese until well combined.
  • Season with salt and pepper, then let simmer on low for 15-20 minutes.
  • Serve hot, garnished with chopped cilantro.

Notes

Leftovers can be stored in the fridge for 3-4 days. Add a splash of water or broth when reheating to prevent thickening.
