For the Slaw

  • 2 tablespoons apple cider vinegar Brightens the slaw

Instructions
 

Preparation

  • Gather all your ingredients.
  • In a bowl, mix together apple cider, soy sauce, Dijon mustard, garlic powder, and a generous sprinkle of salt and pepper.
  • Marinate the chicken by placing chicken thighs in a dish and pouring the marinade over them, ensuring they are well coated.
  • Cover and let it marinate for at least 30 minutes, preferably longer.

Cooking

  • Preheat your oven to 375°F (190°C).
  • Place marinated chicken thighs in a baking dish, pour remaining marinade over top, and bake for about 25-30 minutes or until chicken is cooked through.
  • While the chicken bakes, combine shredded cabbage, grated carrot, sliced apples, mayonnaise, apple cider vinegar, honey, and celery seed in another bowl to prepare the slaw.
  • Once chicken is cooked, serve with a generous helping of slaw on the side.

Notes

Marinating the chicken longer enhances the flavor. For a caramelized finish, broil the chicken briefly after baking. Add nuts for extra texture in the slaw, but warn anyone with nut allergies.
