Ingredients
  

For Sautéing

  • 2 tablespoons olive oil For sautéing, to bring out the flavors of the veggies.
  • 1 medium onion, diced The base of many wonderful things.
  • 3-4 jalapeño peppers, seeds removed and diced Adjust per your spicy tolerance.
  • 6-8 ears corn on the cob, kernels cut from the cob Fresh corn adds sweetness and delightful texture.
  • Kosher salt and black pepper, to taste Seasoning is key.
  • 6-8 cloves garlic, minced Garlic enhances flavor.

Main Ingredients

  • 2 pounds ground chicken A healthier alternative to beef.
  • 3 tablespoons chili powder The cornerstone seasoning in the chili.
  • 2 tablespoons paprika Adds sweetness and color.
  • 1 tablespoon cumin Adds earthy depth.

For the Soup Base

  • 4 cups chicken broth Keeps the chili light yet hearty.
  • 1 tablespoon chicken base (such as Better Than Bouillon) Adds extra richness.
  • A few dashes of hot sauce of choice Adjust spice level to taste.

Finishing Touches

  • 1 cup sour cream Adds creamy finish.
  • 1 cup chopped cilantro Fresh herbs brighten the dish.
  • 3 tablespoons lime juice Adds a zing.
  • Optional toppings: more cilantro, crumbled cotija cheese, chili powder, lime wedges. Customizations are encouraged!

Instructions
 

Preparation

  • Heat olive oil in a large soup pot over medium heat.
  • Add diced onion, jalapeños, and corn kernels. Season with salt and pepper. Sauté for 7 to 9 minutes until the onion is translucent.
  • Add minced garlic and ground chicken. Break apart the chicken and brown it for another 7 to 9 minutes.

Cooking

  • Sprinkle in chili powder, paprika, and cumin. Mix well and adjust seasoning if necessary.
  • Pour in chicken broth and add chicken base. Bring to a gentle boil, then reduce heat and simmer uncovered for 25 to 30 minutes.
  • Stir in hot sauce, sour cream, cilantro, and lime juice. Cook for an additional 5 to 10 minutes until creamy.

Serving

  • Ladle chili into bowls, topping with optional garnishes as desired.

Notes

Chili tastes better the next day. Store leftovers in glass containers for freshness. Reheat in the microwave or stovetop, adding water or broth if needed.
