  • 1 cup Shredded carrots Adds color and crunch.

  • 8 sheets Rice paper wrappers Available at Asian markets or the international aisle.

Preparation

  • Gather and prep all the ingredients: chop bell peppers, shred carrots, and wash basil leaves.
  • Heat a large skillet over medium heat and add the ground beef. Cook until it's browned, about 5-7 minutes.
  • Drain excess fat from the beef, then add soy sauce and hoisin. Stir well, and mix in the shredded carrots and chopped bell peppers. Cook for another 3-4 minutes.
  • Fill a shallow dish with warm water and soak each rice paper for about 10 seconds, then lay flat on a clean surface.
  • Spoon a few tablespoons of the beef mixture onto the rice paper, add basil leaves, and roll up tightly. Repeat with remaining filling.
  • Optionally, pan-fry the rolls for a crispy finish.
  • Serve with your choice of dipping sauce, like peanut or sweet chili sauce.

Notes

Store leftovers in an airtight container in the fridge. For reheating, use a skillet with a bit of oil to regain crispiness. Keep soaking times under control to avoid soggy wraps.
