Ingredients
  

For the Peanut Dressing

  • ½ cup natural, creamy peanut butter Choose a natural brand for the rich flavor without added sugars.
  • 3 tablespoons low-sodium soy sauce A dash of umami without all the sodium hassle.
  • 2 tablespoons brown sugar or honey Sweetness balances the salty notes.
  • 2 tablespoons rice wine vinegar Adds a perfect tangy kick.
  • 2 cloves of garlic, minced The more garlic, the merrier!
  • 1 teaspoon fresh ginger, minced Provides spicy flair and aromatic warmth.
  • 1-2 teaspoons sriracha sauce Adjust according to heat tolerance.
  • water Needed to thin the dressing.

For the Wraps

  • 3 cups cooked chicken breast, chopped Use leftovers or rotisserie chicken.
  • 3 cups coleslaw mix Provides crunch and variety.
  • 1 cup grated carrots Adds sweetness and vibrant color.
  • ½ cup fresh cilantro, chopped Super fresh and packs a punch.
  • ½ cup roasted peanuts, roughly chopped Adds that crucial nutty crunch.
  • 6 large flour tortillas Whole wheat can be used for a hearty version.

Instructions
 

Prepare the Peanut Dressing

  • In a medium bowl, combine peanut butter, soy sauce, brown sugar (or honey), rice wine vinegar, minced garlic, ginger, and sriracha. Whisk until smooth, adding water as needed for consistency.

Prepare the Filling

  • In a large mixing bowl, combine chopped chicken, coleslaw mix, grated carrots, cilantro, and chopped peanuts. Toss gently to mix.

Dress the Filling

  • Pour the peanut dressing over the chicken mixture and toss until fully coated. Let it sit for 3-5 minutes.

Warm the Tortillas

  • Wrap tortillas in a damp paper towel and microwave for about 30 seconds until pliable.

Assemble the Wraps

  • Place about one-sixth of the filling in the center of each tortilla. Fold in the sides and roll from the bottom up, tucking tightly.

Notes

These wraps can be served with a side salad or roasted sweet potatoes. Leftovers keep well in the refrigerator for 3-4 days.
