Preparation

  • In a large skillet, heat the olive oil over medium heat.
  • Add minced garlic and sun-dried tomatoes, and sauté for 2-3 minutes until fragrant.
  • Stir in butter beans and sauté for another 2-3 minutes.
  • Pour in heavy cream and bring to a simmer. Cook for about 5 minutes, stirring occasionally.
  • Mix in grated Parmesan cheese and dried Italian herbs. Season with salt and pepper to taste.
  • Cook until the sauce thickens and becomes creamy, approximately another 5 minutes.
  • Garnish with fresh parsley before serving.

Notes

Can be served with crusty bread or a green salad. Leftovers store well and taste better the next day.
