  • 2 tablespoons olive oil For sautéing the vegetables.
  • to taste Parmesan cheese for serving Optional but adds great flavor.

Instructions
 

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Sauté chopped onions until translucent, about 5-7 minutes.
  • Stir in minced garlic and cook until fragrant, about 1 minute.

Cooking

  • Add broccoli florets and vegetable broth; bring to a boil.
  • Reduce heat and simmer until broccoli is tender, about 10-15 minutes.
  • Using an immersion blender, puree the soup until smooth.
  • Stir in milk or cream and season with salt and pepper.
  • Heat through before serving.

Serving

  • Scoop into bowls and sprinkle with parmesan if desired.

Notes

Use fresh ingredients for best flavor. Adjust consistency with broth as desired. Add herbs for layers of flavor.
