Instructions
 

Cooking

  • Heat a splash of olive oil in a pot over medium heat until it shimmers.
  • Sauté the chopped onions until they soften and turn translucent (about 5 minutes).
  • Add the diced apple, shredded chicken, white beans, and spices (chili powder, cumin, garlic powder, salt, pepper). Stir to combine.
  • Gradually pour in the chicken broth and bring it to a gentle simmer.
  • Reduce heat and let it simmer for about 20 minutes, stirring occasionally.
  • Stir in the shredded white cheddar until melted and combined.
  • Serve hot, topped with herbs, avocado, or extra cheese.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. Reheat on the stove, adding water or broth if it thickens too much. Freezes well for up to 3 months.
