  • 1 tablespoon lemon juice Fresh is best for flavor.
  • 1 tablespoon fresh basil, chopped Adds brightness and aroma.

Instructions
 

Preparation

  • Gather your ingredients.
  • If not using pre-cooked chicken, cook the chicken by poaching, grilling or sautéing. Shred once cool.
  • In a large bowl, combine shredded chicken, sun-dried tomatoes, celery, bell pepper, and red onion.
  • In a separate bowl, mix together mayonnaise, Greek yogurt, lemon juice, and fresh basil until smooth.
  • Pour the dressing over the chicken mixture and stir until well combined.
  • Season with salt and pepper to taste.

Serving

  • Serve as a sandwich, stuffed in pita bread, or with favorite crackers.

Notes

Store leftover chicken salad in an airtight container for 3-4 days. Reheat if desired, but do not microwave to avoid ruining the texture.
